I know the answer to this is probably no, but still regardless I'll ask away
1) if one wants to use the FMGS in 2d mode in fs9 can they?
Is their any flight hardware requirement, such as separate throttles or such?bCan a simple mouse and keyboard suffice?

At the 50' callout if you disengage and pull back, your too late. The a/c is already descending on the extreme Descent rate, and you wont have time to compensate. I suggest taking over at 200-300' as you have time to take manual control, and from there slow the rapid descent rate Vas is programmed f...

The only way would be to modify the A321 config file to reflect the characteristics of the PA 321. The vasFMC folder contains the cfg files, make a copy and edit away.

Something glitched, and the best bet would be to see if when you "create a flight" you load the aircraft, and manually save the AC in a cold dark cockpit. Save the flight, and exit out of FS. Then restart FS and see if the gauges don`t load. I believe if they don`t, what your experiencing ...

Plain and Simple: There still has been no CPU on the consumer market that can run FSX SP2 with everything maxed out and running plenty of addons. Unfortunately only the author(s) Alex wemmer would know. and I doubt were gonna see anything on that end. You can also try the person(s) at Next Level Simulations, as on of them was a programmer on the Vas team. But again i dont see any traction from either source in regards to solving the fuel bug

If this is like the FS9 problem I use to have, its usually due to something called a keystroke error. VasFMC interacts with FS9 variables (conditions) thru something called FSUPIC. You shouldnt have a problem if you leave it as is be. I would skip entering the fuel into the fuel page. Another thing is to delete the log file in the vasFMC folder, it somehow resets the situation so you wont have the Rapid CTD in sucession.
