Re: Change default instruments background
This should work (MAKE A BACKUP BEFORE DOING ANYTHING!): Go to the panel folder in your A321 folder. Then double click on the cabinet file. Inside there, search for "background". This will narrow down the results so that you can find the files pfd_background.bmp and mfd_background.bmp. Extract them to wherever.
These files are in a compressed bmp format (will not show up using Windows photo viewer), so I recommend using some photo editor that can manipulate a wide type of files. Once you open the copies, just apply a black-and-white/ grayscale filter. Then save them. Save again in a compressed bmp format using dxtbmp (not sure what kind is initially used...so use your judgement on that one. I don't recommend dxt1 or dxt3 for this, as you want high quality in the cockpit).
Done.

Re: Change default instruments background
In terms of photo editors, in reality, if you just use dxtbmp to save the textures as normal bmps or 32-bit extended bitmaps, you can use windows editing programs (or just MS word) to apply the effects. Trust me-all my texture work for any effects or whatever is primarily accomplished using MS word lol. No photoshop or anything fancy.
