Hello,
Was hoping for some help with something.
I always fly for a Spanish charter airline (Spanair) and have both your great A320 and A321 (IAE engines), both the latest versions.
But my question is, how would it be possible to edit the aircraft.cfg or where abouts so that I can turn the current A321 into a A321 HGW.
Basically meaning High Gross Weight. Since Spanair operated flights from the Canary Islands to Norway and Scandinavia on flights in excess of 6+ hours.
However with a fully loaded 212 seater A321 and baggage and fuel it's impossible to even reach the destination. I've tried it twice before and both times I have either got to Norway with 20 minutes of fuel left or had to refuel in Denmark/Netherlands.
An example is GRAN CANARIA DE LAS PALMAS (GCLP) - TROMSO (ENTC) which has a distance of 2855nm
This is my current fuel tab from aircraft.cfg (not sure if it's of any help or it's something else I have to change):

I thing there is no problem with your aircraft.cfg.
The fuel is iqual to mine, and my fuel flow is 1.24. With those my range is about 3200nm.
The problem is probably the way you fly.
With the max payload the inicial altitude is FL330.
When the total weight of the aircraft is less them 84000kg climb to FL350.
When 79000kg climb to FL370.
When 74000kg climb to FL390. Make the rest of the flight at FL390. Aproching 125nm from the destination start tour descend.
Making that you can make GCLP/ENTC without no problem.
Diferent altitudes have diferents Fuel Flow.

I think I've tried a step climb before but perhaps at too low of a FL. Will have to try as you said a bit higher.
So to get the total weight of the plane would I be correct in thinking that's the:
Passenger weight + baggage + Fuel + Zero fuel weight?
Then during flight I'll need to monitor that weight.

No. You are not intered correct.
The Zero fuel weight is iqual to: Aircraft weight + payload (passenger + baggage) without fuel. So:
The total aicraft weight = Empty Aircraft + payload + fuel. This vallue can not be more them MTOW (maxime take-off weight).
This items appears in FSX when you set the Fuel/Payload
To check in flight the total weight of the aircraft, you can do on gauge ECAM2.
